Sambal Tomat
Sambal Tomat is a delicious spicy Indonesian chili sauce made with tomatoes. Here's a simple and tasty recipe for Sambal Tomat:
Ingredients:
- 500 grams ripe tomatoes, chopped
- 20 bird’s eye chilies, sliced
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon shrimp paste
- 1 tablespoon palm sugar
- Salt to taste
Instructions:
- Heat the vegetable oil in a wok over medium heat.
- Add the chilies, shallots, garlic, and tomatoes to the pan and fry for about 5 minutes.
- Put all the ingredients in a mortar and add salt, palm sugar, and shrimp paste.
- Pound the ingredients into a coarse paste. Can also use a blender, but do not over-blend the sambal!
- Move the ingredients back into a pan over low heat and cook it until it thickens up.
- Remove the pan from the heat and let the sambal tomat cool down.
- Once cooled, transfer the sambal tomat to a sterilized jar or container.
- Store the sambal in the refrigerator for up to two weeks.
