Sambal Tomat is a delicious spicy Indonesian chili sauce made with tomatoes. Here's a simple and tasty recipe for Sambal Tomat:

Ingredients:

  • 500 grams ripe tomatoes, chopped
  • 20 bird’s eye chilies, sliced
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon shrimp paste
  • 1 tablespoon palm sugar
  • Salt to taste

Instructions:

  1. Heat the vegetable oil in a wok over medium heat.
  2. Add the chilies, shallots, garlic, and tomatoes to the pan and fry for about 5 minutes.
  3. Put all the ingredients in a mortar and add salt, palm sugar, and shrimp paste.
  4. Pound the ingredients into a coarse paste. Can also use a blender, but do not over-blend the sambal!
  5. Move the ingredients back into a pan over low heat and cook it until it thickens up.
  6. Remove the pan from the heat and let the sambal tomat cool down.
  7. Once cooled, transfer the sambal tomat to a sterilized jar or container.
  8. Store the sambal in the refrigerator for up to two weeks.

Sambal tomat can be served as a condiment alongside various dishes, such as grilled meats, rice, or noodles. Enjoy!
